THIS is a Spanish-inspired recipe, so serve the pork chops with diced potatoes sauteed in olive oil. When cooked, add some sage leaves. Or, if you are feeling virtuous, have a radicchio salad dressed with oil and sherry vinegar; throw a few capers in for good measure. I would also crack open a good bottle of Rioja.
