USUALLY found growing in marshes on the edge of tidal waters, samphire is often referred to as "poor man's asparagus". With its succulent stems and salty flavour, this bright-green vegetable-of- the-sea is perfect to go with fish dishes.

And the next few weeks are the best time to eat it. Until the end of July any good fishmonger will sell samphire by the handful. Or pick it yourself if you are planning a trip to the seaside this weekend.
