Summary
THE pollack is a fish whose hour has come. For decades, Pollachius Pollachius has had to play second or even third fiddle to the mighty cod and it has been viewed with suspicion by chefs and fishmongers alike. But as we put more emphasis on sustainable fishing this handsome fish is building up a loyal fan club.
It would be helpful if everyone could agree on how it is spelled pollack with an A is the spelling in Alan Davidson's handbook North Atlantic Seafoods, so a good many menus out there will need rewriting. It is also worth noting that the "Alaskan or Walleye Pollock" that has been pressed into service by the frozen food companies to make non-cod fish fingers is not the same as our native pollack.See the full content of this document
