AS THE owner of a delightful auberge (country inn) and restaurant in western France, Heather Thoreau meets a lot of British hopefuls keen to live the dream. "Their 'business plan' goes something like this: 'We want to buy a super old place, fix it up and do what you're doing; run a hotel and earn enough money to take two months off a year. What we made from selling our semi in Putney should be more than enough to get us started'." It will not, Thoreau says, with feeling. And she should know.

Ten years ago, along with her French husband, Guillaume, she began the restoration of the Lyon d'Or in Anglessur- l ' Anglin, in the Vienne department, turning it from a ruin into a highly recommended hotel that now appears in all the best guides. It was a labour of love that involved dirty, backbreaking work, and came near to sinking them financially.
