The idea behind the growing chain of Ping Pong restaurants was to demystify the concept of dim sum.
Granted, the strap line "little parcels of deliciousness" grates a bit, but the idea is sound. The sinuous layout of the counters here, the original site, means there is plenty of bar space and you shouldn't have to wait around to get seated among the cocktails or Chinese beer being served. Meanwhile, the production line churning out the wicker steamers of dumplings cuts down delays and service is usually prompt.
