Summary
NOW that airfreight and the changing climate are blurring the seasons, the traditional ritual of eating native oysters only when there is an R in the month is being called into question, particularly as oyster lovers will happily eat rock oysters year- round.
Originally the "summer break" from native oysters stemmed from the oyster's breeding season. Natives can be flabby and milky when the waters are warm but it is the weather rather than the calendar that should dictate the opening of the season.
