Summary
THERE is no taste more evocative of late spring than English asparagus. Yet its slightly bitter, vegetal flavour is no friend to many wines. If you douse it in butter, that can present problems, too: you need something with decent acidity to cut through. So last week I consumed unfeasible quantities of the green spears in order to determine the best wine match.
Sancerre "Les BaudriEres" 2005 (Majestic, Pounds 8.99 or Pounds 6.99 when you buy two; you must buy at least 12 bottles of wine in total) Sancerre, the world's most famous sauvignon blanc, is often poor value for money.
