HEALTHY STARTER Tomato and Borlotti Bean Soup (serves 4)

Clove of garlic Red onion Olive oil 1 x 400g can tomatoes 1 x 410g can borlotti beans Gently fry the crushed clove of garlic with one finely chopped red onion in a little olive oil until soft, but not browned. Empty one 400g can of tomatoes and juice with the onion and garlic in a blender with about half of one 410g can (rinsed) borlotti beans.
